Ingredients
  

  • 12 oz fettuccine or your pasta of choice
  • 2 tablespoons olive oil
  • 1 medium onion chopped
  • 3 garlic cloves minced
  • 8 oz fresh mushrooms sliced
  • 6 cups fresh spinach loosely packed
  • 1 cup heavy cream
  • 1 cup Parmesan cheese grated
  • Salt and pepper to taste
  • 1 tablespoon fresh parsley chopped (optional)
  • 1 teaspoon red pepper flakes optional

Instructions
 

Cook the Pasta:

  • Bring a large pot of salted water to a boil.
  • Add pasta and cook according to package instructions until al dente.
  • Drain and set aside.

Prepare the Vegetables:

  • In a large skillet, heat olive oil over medium heat.
  • Add chopped onion and cook until translucent, about 5 minutes.
  • Add minced garlic and cook for another minute.

Cook the Mushrooms:

  • Add sliced mushrooms to the skillet.
  • Cook until they release their moisture and turn golden brown, about 5-7 minutes.

Add Spinach:

  • Add spinach to the skillet, stirring until it wilts, about 2-3 minutes.

Make the Sauce:

  • Pour in heavy cream and bring to a gentle simmer.
  • Add grated Parmesan cheese and stir until melted and the sauce thickens.

Combine and Season:

  • Add the cooked pasta to the skillet and toss to combine.
  • Season with salt, pepper, and red pepper flakes if using.
  • Garnish with fresh parsley if desired.

Serve:

  • Serve hot and enjoy!
