Ingredients
  

  • 1 cup fresh mint leaves
  • 1/2 cup coconut cream
  • 1/2 cup fresh lime juice about 4-5 limes
  • 1/2 cup simple syrup or to taste
  • 2 cups club soda
  • 1 cup white rum
  • 1 cup crushed ice
  • Fresh strawberries or raspberries for garnish
  • Lime slices and mint sprigs for garnish

Instructions
 

  • Muddle the Mint: In a large pitcher, add the fresh mint leaves. Using a muddler or the back of a spoon, gently press the mint leaves to release their essential oils. Be careful not to tear them too much.
  • Add Lime Juice and Simple Syrup: Pour in the fresh lime juice and simple syrup. Stir well to combine the mint with the lime and syrup, allowing the flavors to meld.
  • Incorporate Coconut Cream: Slowly add the coconut cream to the mixture. Stir until well combined. The coconut cream should blend nicely with the mint and lime, giving it a creamy texture.
  • Mix in the Rum: Pour the white rum into the pitcher, stirring gently to combine all the ingredients. This is where the cocktail gets its kick!
  • Add Crushed Ice: Fill glasses with crushed ice. This will help keep your cocktail cold and refreshing.
