Ingredients
  

  • 6 large Russet potatoes scrubbed clean
  • 4 tablespoons olive oil
  • 1 teaspoon sea salt
  • 1 teaspoon garlic powder
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 6 slices of bacon cooked and crumbled
  • 1/2 cup sour cream
  • 4 green onions chopped
  • Salt and pepper to taste

Instructions
 

  • Preheat the Oven: Preheat your oven to 400°F (200°C).
  • Prepare the Potatoes: Prick each potato several times using a fork. Rub them with olive oil, then season with sea salt. Place the potatoes directly on the oven rack and bake for about 45 to 50 minutes, or until they are tender.
  • Cool and Cut: Once baked, allow the potatoes to cool slightly, then cut each potato in half lengthwise.
  • Scoop the Potatoes: Using a spoon, gently scoop out the insides of the potatoes, leaving a small border of potato inside the skins. Keep the scooped-out potatoes for another use like mashed potatoes.
  • Season the Skins: Brush the insides of the potato skins with olive oil and sprinkle with garlic powder, salt, and pepper.
  • Crisp Up the Skins: Place the skins on a baking sheet, skin side up. Pop them back into the oven for 10 minutes to get crispy.
  • Add the Filling: Remove the skins from the oven and flip them over. Fill each potato skin with a mixture of cheddar and mozzarella cheese. Top with crumbled bacon.
  • Final Bake: Return the filled skins to the oven and bake for another 8-10 minutes or until the cheese is melted and bubbly.
  • Garnish and Serve: Remove from the oven and let them cool slightly. Add a dollop of sour cream to each skin and sprinkle with chopped green onions. Serve them warm and enjoy!
