Crisp Up the Skins: Place the skins on a baking sheet, skin side up. Pop them back into the oven for 10 minutes to get crispy.
Add the Filling: Remove the skins from the oven and flip them over. Fill each potato skin with a mixture of cheddar and mozzarella cheese. Top with crumbled bacon.
Final Bake: Return the filled skins to the oven and bake for another 8-10 minutes or until the cheese is melted and bubbly.
Garnish and Serve: Remove from the oven and let them cool slightly. Add a dollop of sour cream to each skin and sprinkle with chopped green onions. Serve them warm and enjoy!
