Easy Black Friday Breakfast Burrito Recipe

- 4 large flour tortillas
- 8 large eggs
- 1/2 cup diced onions
- 1/2 cup diced bell peppers
- 1/2 cup cooked and crumbled bacon or sausage, if you prefer
- 1 cup shredded cheddar cheese
- 1/4 cup chopped fresh cilantro
- 1 avocado sliced
- Salt and pepper to taste
- Salsa optional
- Sour cream optional
Prepare Ingredients: Chop the onions, bell peppers, and cilantro. Slice the avocado and crumble the cooked bacon or sausage.
Cook the Vegetables: In a large skillet over medium heat, sauté the diced onions and bell peppers until they’re soft, about 5 minutes.
Scramble the Eggs: In a bowl, beat the eggs with a little salt and pepper. Pour into the skillet with the onions and bell peppers. Cook, stirring occasionally, until the eggs are just set.
Add Bacon and Cheese: Stir in the crumbled bacon and shredded cheese. Cook until the cheese is melted and everything is heated through.
Assemble the Burritos: Lay a tortilla flat on a plate. Spoon some of the egg mixture down the center. Add a few slices of avocado and a sprinkle of cilantro. Roll up the tortilla, folding in the sides to keep the filling in.
Serve: Serve immediately with salsa and sour cream on the side if desired. Enjoy!
