- 1 Tablespoon butter
- 2-3 cloves garlic minced
- 3/4 cup heavy cream
- 2/3 cup chicken or veggie broth
- 1 pound potato gnocchi uncooked
- 1/3 cup oil-packed sun-dried tomatoes julienne style
- 1/2 cup freshly-grated Parmesan cheese
- 1 teaspoon lemon juice
- kosher salt and black pepper
- 1-2 cups fresh baby spinach
- fresh basil optional garnish
In a large skillet, melt the butter over medium heat.
Add the minced garlic and sauté for about a minute until it becomes fragrant.
Pour in the heavy cream and chicken or veggie broth. Stir well to combine.
Bring the mixture to a simmer and then add the uncooked potato gnocchi. Stir to coat the gnocchi with the sauce.
Allow the gnocchi to cook for about 5-7 minutes until they become tender and the sauce thickens.
Stir in the sun-dried tomatoes and freshly-grated Parmesan cheese. Keep stirring until the cheese is melted and well blended.
Add the lemon juice and season with kosher salt and black pepper to taste.
Gently fold in the fresh baby spinach, allowing it to wilt in the hot sauce.
