For the Pumpkin Cheesecake Layer:
- 8 ounces cream cheese softened
- 1 cup pumpkin puree
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
For the Whipped Cream:
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
For the Graham Cracker Layer:
- 1 cup graham cracker crumbs
- 2 tablespoons melted butter
- 1 tablespoon granulated sugar
Prepare the Graham Cracker Layer:
In a medium bowl, mix the graham cracker crumbs, melted butter, and granulated sugar until well combined.
Divide the mixture evenly among your serving glasses, pressing it down slightly to create a base layer.
Make the Pumpkin Cheesecake Layer:
In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth.
Add in the pumpkin puree, granulated sugar, vanilla extract, ground cinnamon, nutmeg, and ginger. Beat until all the ingredients are well combined and creamy.
Prepare the Whipped Cream:
In a chilled mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract with an electric mixer until stiff peaks form.
Assemble the Parfaits:
Layer the pumpkin cheesecake mixture on top of the graham cracker base in each serving glass.
Add a layer of whipped cream on top of the pumpkin cheesecake mixture.
Repeat the layers until you reach the top of the glasses, finishing with a dollop of whipped cream.
Garnish and Serve:
Optionally, you can sprinkle some cinnamon or graham cracker crumbs on top of the whipped cream for garnish.
Chill in the refrigerator for at least 1 hour before serving.
