Black Friday Pecan Pie Bar Recipe

Crust:
- 1 cup unsalted butter softened
- 2 cups all-purpose flour
- 1/2 cup powdered sugar
- 1/4 teaspoon salt
Filling:
- 3 large eggs
- 1 cup granulated sugar
- 1 cup light corn syrup
- 1 teaspoon vanilla extract
- 2 cups pecan halves
- 1/4 cup unsalted butter melted
- 1/4 teaspoon salt
Prepare the crust:
In a large bowl, beat 1 cup softened butter until smooth.
Gradually add in 2 cups of flour, 1/2 cup powdered sugar, and 1/4 teaspoon salt. Mix until crumbly.
Press this mixture evenly into the bottom of a 9x13-inch baking dish.
Bake for 18-20 minutes or until lightly golden. Set aside to cool.
Prepare the filling:
In another bowl, whisk together 3 large eggs and 1 cup granulated sugar until fully combined.
Add in 1 cup of light corn syrup, 1 teaspoon vanilla extract, 1/4 cup melted butter, and 1/4 teaspoon salt. Mix well.
Stir in the 2 cups of pecan halves until evenly distributed.
Assemble and bake:
Pour the filling over the pre-baked crust.
Spread it out evenly and make sure pecans are distributed across the surface.
Return the dish to the oven and bake for an additional 30-35 minutes, or until the filling is set and golden.
