Activate the Yeast: In a large bowl, combine the warm water, sugar, and yeast. Stir gently and let it sit for about 5 minutes, or until it becomes frothy.
Prepare the Dough: Add the olive oil, salt, and flour to the yeast mixture. Mix until the dough begins to come together. Transfer it to a floured surface and knead for 5-7 minutes, or until the dough is smooth and elastic.
First Rise: Place the dough in a greased bowl, cover it with a damp cloth, and let it rise for about an hour or until it doubles in size.
Shape the Knots: Punch down the dough and transfer it back to the floured surface. Divide the dough into 12 equal pieces. Roll each piece into a rope about 6 inches long and tie it into a knot.
Second Rise: Place the knots on a baking sheet lined with parchment paper. Cover them with the damp cloth again and let them rise for another 30 minutes.
Prepare Garlic Butter: While the knots are rising, melt the butter in a small saucepan over low heat. Add the minced garlic and cook for 2-3 minutes until fragrant. Remove from heat and stir in chopped parsley and Italian seasoning.
Bake: Preheat your oven to 375°F (190°C). Bake the knots for 15-20 minutes, or until they are golden brown.
Brush with Garlic Butter: As soon as the knots come out of the oven, brush them generously with the garlic butter. Sprinkle with grated Parmesan cheese.
