Getting Creative with Fillings: One of the best things about stuffed peppers is how adaptable they can be. While I love the classic ground meat and rice filling, you can easily switch it up. Try using quinoa instead of rice for a protein-packed punch or substitute black beans for a vegetarian option. You can also throw in some corn, diced zucchini, or even spinach for added nutrients and a burst of color.
Storing and Reheating Leftovers: These stuffed peppers also make for fantastic leftovers. Simply store them in an airtight container in the refrigerator for up to three days. When you're ready to reheat, you can pop them in the microwave for a couple of minutes or warm them in the oven at 350°F for about 15-20 minutes. They maintain their flavor and texture beautifully, making them an excellent option for meal prepping your weeknight dinners.

Ingredients
- 6 large orange bell peppers
- 1 lb ground beef or turkey
- 1 cup cooked rice
- 1 small onion finely chopped
- 1 clove garlic minced
- 1 can diced tomatoes 14.5 oz
- 1 cup shredded mozzarella cheese
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Prepare the Peppers: Start by preheating your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Use a small paring knife to carve jack-o'-lantern faces into one side of each pepper. Set aside the tops to use later as lids.
- Cook the Filling: In a large skillet, cook the ground beef or turkey over medium heat until it's no longer pink. Drain the excess fat, then add the onion and garlic. Cook until the onion is translucent.
- Mix Everything Together: In a medium-sized mixing bowl, combine the cooked meat mixture, cooked rice, diced tomatoes, and Italian seasoning. Season with salt and pepper to taste.
- Stuff the Peppers: Fill each prepared bell pepper with the meat and rice mixture. Pack it down gently to ensure each pepper is fully stuffed. Place the tops back on each pepper.
- Bake: Arrange the stuffed peppers in a baking dish and cover with aluminum foil. Bake in the preheated oven for about 30 minutes.
